From humble beginnings and with very modest intentions to set up a canteen style eatery on the Surf Coats of Victoria, Stevie came across and old house, located at 2 Cliff Street, Torquay. Mr. Walker, a well-known local food merchant, once owned it. The house was dilapidated and in a state of disrepair. After some discussion with Ian Marshal, a visionary estate agent and the Draper bother’s, the owners of the land, it was decided to knockdown the house and allow Stevie to create a one of a kind, offbeat, boardwalk style eatery. On the menu there where lots of smoky and piquant flavours to go with freshly cut salads and homemade sauces. It wasn’t long before word got out and Esta Costilla got known for what many described as a unique and unforgettable food experience. But Stevie had a lot more install for Esta Costilla and for the residence of the Surf Cost, Great Ocean Road and surrounding towns. He had a burning desire to continue exploring and expanding his culinary repertoire and in 2017 diverted into providing a boutique private chef service. Due to popular demand and word of mouth the business continues to grow and is now servicing a steady and growing customer base.
